OUR APPROACH

Our focus is on handpicked, small-batch production, maximising quality, and complexity. Each bottle reflects the unique character of our single block and estate-grown Pinot Noir, Chardonnay, Syrah, Cabernet Franc, and Fume Blanc.  Wines that truly embody our unique terroir and each season’s variability.  

With our onsite winery under development, our wine is made nearby in partnership with local wineries. We champion minimal intervention and our hand-harvested grapes ensure that only the finest fruit makes its way into our wines.

Our winemaking philosophy is one of precision and restraint, intervening only when necessary to guide the wine through fermentation and maturation. We believe in letting the quality of the fruit and the nuances of each growing season inform our approach, resulting in wines that exude a true sense of place rather than attempting to mimic old-world styles.

With minimal additions such as sulphur and occasional use of inoculated yeasts, along with light filtration and no fining, we strive to preserve the purity of each varietal. Our moderate use of new oak and commitment to allowing malolactic fermentation to occur naturally when conditions permit further enhance the complexity and depth of our wines.

Our Chardonnay and Fume Blanc are wild fermented in barrel with a range of oak treatments and formats. The Pinot Noir, Syrah, and Cabernet Franc are cold-soaked and whole berry fermented on skins in open-top fermenters before aging in a mix of old and new oak barrels.
