VITICULTURE AND WINEMAKING

We embrace the art of winemaking with a dedication to crafting authentic and exceptional wines.

OUR APPROACH

Our focus is on handpicked, small-batch production, maximising quality, and complexity. Each bottle reflects the unique character of our single block and estate-grown Pinot Noir, Chardonnay, Syrah, Cabernet Franc, and Fume Blanc.  Wines that truly embody our unique terroir and each season’s variability.  

With our onsite winery under development, our wine is made nearby in partnership with local wineries. We champion minimal intervention and our hand-harvested grapes ensure that only the finest fruit makes its way into our wines.

Our winemaking philosophy is one of precision and restraint, intervening only when necessary to guide the wine through fermentation and maturation. We believe in letting the quality of the fruit and the nuances of each growing season inform our approach, resulting in wines that exude a true sense of place rather than attempting to mimic old-world styles.

With minimal additions such as sulphur and occasional use of inoculated yeasts, along with light filtration and no fining, we strive to preserve the purity of each varietal. Our moderate use of new oak and commitment to allowing malolactic fermentation to occur naturally when conditions permit further enhance the complexity and depth of our wines.

Our Chardonnay and Fume Blanc are wild fermented in barrel with a range of oak treatments and formats. The Pinot Noir, Syrah, and Cabernet Franc are cold-soaked and whole berry fermented on skins in open-top fermenters before aging in a mix of old and new oak barrels.

OUR LOCATION

Each aspect of our vineyard promotes complexity in our wines' structure, flavour and aromas. From the slope, elevation, orientation and sunlight exposure to the cool ocean breezes extending the ripening period, our focus is unyielding on quality and respect for our land.

Our Bellarine Peninsula site is positioned on gentle undulating slopes ranging from 27 to 34 metres above sea level with the natural fall running towards Port Phillip Bay to the north.

Most of our 7.7 hectare (19 acre) vineyard blocks run in a north-south orientation following the fall of the land and prevailing wind direction.  This aspect receives more light interception and warmth, promoting ripening, tannin development and yielding rounder, more concentrated flavours in our wine.

We are frost free, even at a low elevation due to the warming influences of the surrounding seas which moderate our climate, particularly in early spring.

However, we operate in a windswept environment at 38 degrees latitude south, with limited protection (other than shelterbelts) from the prevailing strong southerly winds off the Southern Ocean, which typically average more than 20 kph on any given day. These constant winds create a challenging environment for vine and berry growth.

However, the north-south rows channel airflow and drain water through the vineyard, drying vines quickly, reducing potential disease pressures, and the constant need for chemical spraying. 

Our vineyard is uniquely positioned within close proximity to water. Bass Straight and the Southern Ocean are located 5 kms to the south; Port Phillip Bay is within 3 kms to the north and east, whilst Corio Bay lies 10 kms directly west. 

The prevailing winds off these water bodies create a natural cooling influence in the warmer months and a warming influence in late Autumn to Spring, reducing the risk of frost but also reducing the ambient temperature by as much as 5 degrees Celsius when compared to inland wine regions. Early budburst varieties of Chardonnay and Pinot Noir stand a better chance of survival as a result.

OUR SITE

Set within 80 acres (approximately 32.5 hectares), our site features a natural spring that feeds a chain of ponds and a seasonal waterway. The landscape is dotted with riparian river red, manna, swamp and yellow gums, creating a tranquil and ecologically diverse environment.

With a commitment to promoting biodiversity, 15% of the farm has been set aside for regeneration efforts, attracting native insects and birds. The soil profiles vary across the property, providing an ideal canvas for sustainable land use.

The remaining portion of the site is reserved for sheep grazing and breeding, ensuring a harmonious blend of agriculture and conservation.

Surrounded by water on all sides and influenced by prevailing offshore winds, it enjoys moderate weather conditions. With an annual rainfall of 500-600mm, this climate creates an excellent environment for cultivating premium-quality grapes.

REGENERATIVE VITICULTURE

We take a biological and regenerative approach to our vineyard management.  Our focus in viticulture is about always enhancing soil structure through composting, maintaining a permanent multi-species cover crop between the vines and mulching beneath the vines. 

In essence, we are soil farmers.

For our vines and wine to flourish, our soil must be healthy, and this philosophy translates to authentic wine, which reflects its origin and seasonal influences.

Applying this approach promotes the vines' root growth and absorption of water and nutrients, develops beneficial soil microbes as well as suppressing plant pathogens. Sheep are introduced during autumn and winter further enhancing soil health. This approach builds resilience to extreme weather conditions and a variable and changing climate.

We apply a light touch to the vineyard.  We substitute natural compost for fertilizer, with a rotating program adding to soil health every five years. We prioritise organic sprays over synthetic ones and avoid herbicides and insecticides.

Through the growing season, our pruning, shoot thinning, canopy management and harvesting are all done by hand.

Our three dams provide sufficient water storage for regulated deficit irrigation over the growing season.

We commenced a vine renewal program in 2021 involving removing underperforming and diseased vines, preparing soils and replanting with drought tolerant and disease/pest resistant rootstock. In 2023, we completed grafting Chardonnay cuttings onto existing Merlot and Malbec vines.

OUR VINEYARD

The vineyard was originally planted on own roots in the late 1990s. More recently, we have replanted and expanded the vineyard on drought-resistant rootstock and grafted Chardonnay over original Malbec and Merlot vines.

The vineyard can be broadly grouped into a range of soil profiles and sections: the Coatsworth, Spring Dam, Home Block and Middle Creek sections.

The Coatsworth and Spring Dam blocks sit on the south side of the property and are exposed to prevailing ocean winds. The soil profile is a delicate balance of loam on sandy and calcareous clay on top of deep layers of volcanic basalt. These soils produce a more savoury and textural style of wine.

In contrast, the Home and Middle Creek blocks enjoy a more sheltered position, shielded from the Southern Ocean gusts. Nestled on well-drained sandy loam soil over a foundation of sand and clay, these blocks produce more finer, fruit-driven wine rich with natural acidity.
