FUMÉ BLANC
Pale straw with green hues. Expressive nose of citrus zest, guava, and fresh cut grass, layered with subtle tropical notes and a hint of flinty minerality. Medium-bodied with a citrus-driven core, balanced by phenolic grip and creamy texture. Oak adds subtle depth without overpowering the fruit purity. Refreshing acidity leads to a lingering finish with herbal echoes and a clean, zesty close.
VINIFICATION
Hand-harvested on 27th February, whole bunch pressed and barrel fermented with indigenous yeasts on full solids. 100% secondary malolactic fermentation, matured on lees in 300L aged French oak barrels for 6 months and bottled in September 2025.
2025 VINTAGE
The growing season commenced following a dry winter in 2024, leading into a spring and summer with below-average rainfall and higher temperatures. Persistent dry weather led to lower volumes, smaller berry sizes, yielding wines of excellent structure, concentrated flavours, vibrant acidity, and intense fruit profiles.
VITICULTURE
Soils: Eocene ferric vertisols of clayey loam over Miocene basaltic clay.
Varietals & Clones: Sauvignon Blanc (Bordeaux F4V6, 5835) on own roots
Aspect/Planted: Block 4, east-west
Vine Density: 2380 / Ha (2.8m width and 1.5m spacing)
Canopy Management: Double Guyot cane pruned Ferric Vertosols of clayey loam.
Yield: 2 tonnes/acre.
