CHARDONNAY 2024 WINEMAKING
Hand-harvested on Feb 23, 2024, pressed then transferred to French oak barriques (30% new) for wild fermentation. 20% secondary malolactic fermentation with battonage over nine months before racking and bottling in January 2025.
CIRCULUS 2024 VINTAGE NOTES
After an unusually warm and dry winter, the growing season started 2-3 weeks earlier than usual. Ample Spring rainfall and moderate temperatures were welcome, which evolved into an extremely dry summer, assisting the ripening process, producing higher than average yields but preserving full flavours and acidity.
